What?! A Meatless Meal?

My grocery bill seems to just keep going up. To help lower the cost, I’m looking for alternative meal options. One way that has helped me is to buy less meat. Although my family and I are big meat-eaters, I have found some recipes that have protein substitutes and are still delicious. Here are three of my family’s favorites:
- Black Bean and Brown Rice
- Sweet Potato and Black Bean
- Vegetable Stuffed Cannelloni
In most cookbooks, there are vegetarian meals or a meatless meal section, and MCPL has a great selection of cookbooks available for checkout. We didn’t miss the meat in these meals, and I’m sure you won’t either.

Hmmm...good idea! I don't have to have meat, I just don't have many recipes that are meatless.
The Black Bean and Brown Rice one sounds especially good.
