Wedding Cakes Aren't Just for Weddings

We all need a little sweetness in life, and one of my favorite sweet treats is cake. When I got this delicious wedding cake recipe from a relative, I had to try it. It is tasty and easy enough to make for any occasion, so you don't have to wait for a wedding to come along. I hope you enjoy it.
Italian Wedding Cake
1/2 c. butter (the real stuff)
1/2 c. shortening
2 c. sugar
5 eggs (separated)
2 c. flour
1 tsp. baking soda
1 c. buttermilk
1 tsp. vanilla
1 small can of coconut
1 c. chopped pecans
Mix butter, shortening, and sugar. Add egg yolks. Beat well. Alternate dry ingredients and buttermilk. Add vanilla. Stir in coconut. Whip egg whites and fold into mix.
Bake at 350 for 20-25 minutes in 3-- 8 inch round pans--or you can make cupcakes.
Icing
1 stick butter
1 8oz. cream cheese
1 bag powdered sugar, about 16oz
1 tsp. vanilla
1 c. pecans
Mix well and spread on cooled cake.
