September 18, 2012
Fall can be a busy time of year for many people. School and all of its extracurricular activities have gotten into full swing, the holidays are fast approaching, and the days are getting shorter, making it feel like you have even less time to get things done. It's times like these when you need some quick and delicious recipes on hand to get dinner ready to feed a hungry family in record time.
This is from Relax--You May Only Have a Few Minutes Left by Loretta La Roche.
"Francesca's Little Red Sauce"
- 1/4 cup olive oil
- fresh basil
- 1 small onion, chopped
- dash of oregano
- 5 cloves garlic, minced
- salt & pepper to taste
- 2 lbs. plum tomatoes, blanched, skinned, and chopped or one 28 oz. can plum tomatoes
- 1 lb. pasta cooked
- freshly grated Parmesan cheese
Heat the oil in a saucepan, and simmer the onion and garlic. Throw in the tomatoes, and raise the heat until it starts to bubble. Add the basil, oregano, salt, and pepper. Break up the tomatoes with a fork, and stir the sauce occasionally.
Cook about 20 minutes, and pour over the pasta. Sprinkle with freshly grated Parmesan cheese.
