Soup's On!

Now that the weather is turning colder, it’s time for me to pull my slow cooker out of the back of the cupboard and stock my pantry with ingredients for soup. Soup, or stew, is my comfort food in the colder months. There is nothing better than returning home after being gone all day to the aroma of a delicious stew in the slow cooker. The following is one of my favorite stews and is full of vegetables for the kids:
5 HOUR STEW
2 lbs. cubed stew meat
1 cup tomatoes in juice
2 tbsp. Minute tapioca
1-1/2 tsp. salt
2 tbsp. Worcestershire sauce
2 cups potatoes (Quartered)
1 cup diced celery
1 onion (diced)
2 cups carrots (diced)
Mix in the order given in Dutch oven or slow cooker. Bake 5 hours in a 250 degrees oven or simmer on low in a slow cooker for 8 hours.
The Library has a large assortment of cookbooks to find new recipes. We have cookbooks that specifically deal with soups & stews and slow cooker cooking. The Taste of Home series is personally one of my favorite set of cookbooks.
