Ode To Coconut Oil

Did you know that coconut oil is a good fat, and can actually aid you in managing or losing weight? It is! According to Eat Fat, Lose Fat by Dr. Mary Enig, coconut oil is beneficial in the following ways; it enhances the immune system, is excellent for your skin, is shown to produce lower rates of heart disease and cancer in countries where coconut oil is an important part of the diet, helps the body fight infections of all kinds, and when you eat coconut oil and other healthy fats, your body produces a hormone that signals that you are full or satiated.
Coconut oil can be found in most health food stores and some grocery stores. (I have seen it on the shelf at my local Hy-Vee Store.) Look for virgin coconut oil (unrefined). It has a mild coconut flavor and makes the BEST stove-top-popped popcorn. Try adding 1 tablespoon to your smoothie, or sauté vegetables and fish in coconut oil. Here's an easy recipe:
- Rub some fresh or dried herbs, such as basil or oregano, and salt and pepper on a salmon fillet.
- Sautee some minced garlic in a few tablespoons of coconut oil.
- Quickly add the salmon and cook until the fish flakes easily.
- Squeeze some fresh lemon over salmon.
