National Pistachio Day

There are a lot of silly holidays in February.
Everything, from Hoodie Hoo Day on the 20th to Public Sleeping Day on the 28th (please don’t celebrate this one at the Library), is on the calendar, but I, myself, will be observing National Pistachio Day.
Why, you ask? It’s not because they’re good for you, which they are. And, it’s not because they’re referred to as the "happy nut." It’s because I love them, especially in what I affectionately call "Grandma’s Green Salad." Now, green salad is not all leafy and fibrous. Nope, it’s a decadent concoction of marshmallows, pineapple, and pistachio pudding mix, and National Pistachio Day is a perfect excuse to make some (and eat it all).
