If more of us ate like diabetics, maybe it would reduce the rate at which diabetes is developing. I know eating like a diabetic doesn’t sound too appetizing, but I found some very good recipes in the January/February 2013 issue of Diabetic Cooking magazine.
- Spaghetti Squash and Sausage
- Mexican Hot Pot
- Berry Bran Muffins
- Raspberry White Chocolate Danishes
The Berry Bran Muffins were a big hit for my family. What I like about these recipes is that they don't take long to prepare, and they are packed with flavor. MCPL has a lot of diabetic cookbooks and magazines full of great recipes.
