Happy National Noodle Month

In honor of National Noodle Month (otherwise known as March), I would like to introduce you to some of my favorite pasta dishes. I’m an avid cook myself, and I’m on a mission to prove to you that it doesn’t necessarily take a lot of time or effort to produce tasty, filling meals for everyone at your table.
With this unseasonably mild weather we’re having, I’ve been craving one of my favorite light pasta dishes: spaghetti al limone. This dish is an Italian classic that combines olive oil, cream, and lemon to create a delicious, zesty lunch that won’t leave you too full for dinner. The recipe that I use can be found in the January, 2011 issue of Cook’s Illustrated Magazine- be sure to check out their other recipes too, they’re always great!
Another great dish from Cook’s (March issue this time, from 2007) is their roasted tomato sauce. The sauce is quick and easy to make with even bland winter tomatoes, and it goes well with any type of pasta. You can use it in vegetarian dishes–great with just some fresh mozzarella–or even better, pour it over some hot chicken parmesan for a heartier, more filling dinner.
Of course, no article about noodles would be complete without a quick mention of Asian cuisine. Most everyone has heard of Chinese Lo Mein, but Pad Thai noodles are also extremely tasty and often sadly overlooked.
