Greek Tort

Are you in the mood for something light and healthy for dinner during these dog-days of August? Here is a quick an easy recipe a friend gave me. It was inspired by a picture on a magazine cover, but the recipe and ingredients were changed to avoid any precooking and to give it a "Greek Flair":
- On cookie sheet, roll out one of the pre-made pie crusts from the refrigerator section of store
- drizzle with olive oil
- cover with thin slices of 1/2 zucchini and 1/2 yellow squash (leave the outer 1 inch of dough uncovered)
- cover with thin slices of onion
- sprinkle with 3 cloves of finely chopped garlic
- cover with 1/2 package of crumbled feta cheese
- sprinkle with fair amount of dried Greek oregano
- cover with thin slices of ripe tomato
- sprinkle with dash of salt and pepper
- drizzle with olive oil again
- roll up the outer edges of the crust (sort of like a pie)
- bake at 425 for 35-40 minutes
