Coconut Oil Revisited

A while back, I wrote an "Ode to Coconut Oil." I had discovered many of the health benefits of this oil and suggested some ways I was enjoying it.
Well, I’ve discovered some more! Did you know coconut oil assists thyroid function? And, it's great for boosting metabolism? It is. So, I’ve been looking for more ways to enjoy consuming coconut oil, and here are a few:
Coconut Cake: Duh! Just substitute coconut oil for the shortening or fat in your favorite recipe. The oil provides a nice additional coconut flavor. Coconut oil is great for baking, and it's easy to substitute in equal portions to other fats. Just think what you can do for your favorite cookie recipe…
Coconut Berry Delights: These are wonderful little treats that make it easy to increase your oil intake. Some suggest that taking 3 tablespoons of oil a day is a good practice for a variety of health benefits. To make the treats, melt one cup coconut oil. While oil is melting, process ½ cup frozen berries into small pieces in a blender or food processor. Add one teaspoon vanilla extract and 12 drops liquid stevia or honey to taste. Blend in coconut oil til smooth. Then, freeze in plastic ice cube tray or drop spoonfuls on parchment paper and freeze on a baking sheet for about 30 minutes.
I keep my frozen treats in a Ziploc bag in the freezer. Enjoy a little at a time. Large doses all at once can upset the stomach.
Magic Chocolate Shell: Melt ½ cup coconut oil with ¾ cup dark chocolate. Let mixture rest for a few minutes. Drizzle mixture over your favorite ice cream. The coconut oil will freeze to a solid shell. YUM! Any leftovers can be stored in an empty container.
