We all have heard the saying, "breakfast is the most important meal of the day." The saying has a lot of truth to it. Luckily, this important meal has a wide range of options. Sometimes, when I’m in a hurry, my breakfast consists of almonds and dried cranberries with a glass of sweet tea. When I do have the time, I like to make pancakes or waffles.

I recently tried a new waffle recipe that I found in the March/April edition of The Diabetic Cookbook. What was nice about this recipe is that the waffles were neither heavy nor time-consuming to make. We did use the sugar-free syrup that was suggested as well, which makes the meal lighter. You can also find The Diabetic Cookbook magazine and at most of your MCPL branches. In addition, our collection contains many diabetic cookbooks for your healthy diets.
